The vinification of the RESERVA ESPECIAL involves exploiting the quality of the grapes to the maximum in a given year, leaving aside the search for continuity between vintages, with the aim of getting the best and maximum expression of a harvest. These are low-volume wines with an undeniable touch of exclusivity that makes them true collector’s wines.
Ideal with stews, such as a spiced lamb ragout, or game dishes like rice with wood pigeon and snails. It is also the perfect ally for roasted red meats and semi-cured cheeses.
