UNO CHARDONNAY
Varieties: Chardonnay from our estate at Planacor.
Harvest: Made by hand in small cases.
Vinification: After fining the free-run must under cold temperature during 60
hours,
alcoholic fermentation takes place in new French oak barrels of
fine grain.
Ageing: This wine is aged with its lees, adjusting the turbidity level
to keep a colloidal
cushion that muffles the sensory impact in the cask and respects
the variety
character. The wine stays in the casks from August 2003 til April
2005.
Bottling: Following the less interventionist oenological principles, the
wine is not clarified
nor stabilized, so sediments may be found in this wine.
Tasting
Notes: Continuous lactic
notes march past our nose; ripe peach, nuts, nougat
candy, high roast, over an elegant mineral background.
In the mouth this wine combines with mastery freshness
and an extraordinary full body.
